Vermont distiller WhistlePig is expanding its legendary rye whiskey offerings with the new Sasquatch Select series, which will offer the core 12-year-old WhistlePig finished in your choice of a Peruvian rum cask or a Chablis barrel. It's assumed that the line will continue to drop occasionally, each paired to different barrels sourced worldwide.
The Peruvian rum cask offers a nose of dark fruits, a palate of brown sugar with molasses and apricot, and a dry finish. The Chablis barrel, meanwhile, secured from the northern reaches of France, delivers an oaky nose with hints of leather and vanilla, a palate that mixes a "nutty taste such as almonds" with baking spices and cinnamon, and a clean and tight finish.
